STIR-FRY VEGETABLE | |
1 tbsp. oil 1 clove garlic, minced 1 sm. onion, sliced 1 c. sliced mushrooms 2 c. sliced cauliflower pieces 3/4 c. thinly sliced carrot 1/2 c. sliced green pepper pieces 3 tbsp. teriyaki sauce 1/2 tbsp. cornstarch 3 tbsp. cashews or peanuts Combine oil, garlic, onion and mushrooms in a microwave casserole. Microwave on HIGh, uncovered, for 1 1/2 to 2 minutes; stir in cauliflower, carrot and green pepper; cover with lid. Microwave for 3 1/2 to 4 minutes. Stir once. Combine teriyaki sauce and cornstarch in 1 cup glass measure. Drain juices from vegetables into cup and mix well. Microwave on HIGH, uncovered for 1 to 1 1/2 minutes; stir once. Pour over vegetables; sprinkle with nuts; toss lightly. |
