JOHN'S BACON-CHEESE MUFFINS 
1 3/4 c. all-purpose flour
1/4 c. sugar
2 1/2 tsp. baking powder
3/4 tsp. salt
1 egg, beaten
3/4 c. milk
5-6 slices bacon, cooked & crumbled
1/2 c. grated Cheddar cheese
1/3 c. cooking oil or vegetable oil

Combine dry ingredients; set aside. Combine egg, milk and oil. Make hole in center of flour mixture and pour in liquid, blending with fork. Fill paper-lined muffin pan 2/3 full. Sprinkle bacon bits and grated cheese on top. Bake at 400 degrees for 20 to 25 minutes. Yield: 12 muffins.

Note: Good for breakfast.
