BACON AND CHEESE MUFFINS 
1 3/4 c. all-purpose flour
1/2 c. or 2 oz. sharp Cheddar cheese
1/4 c. sugar
2 tsp. baking powder
1/4 tsp. salt
1/4 tsp. ground red pepper
1 egg, beaten
3/4 c. milk
1/3 c. cooking oil
6 strips bacon

Cook bacon until crisp. Drain and crumble. Set aside. Preheat oven to 400 degrees. Grease 12 muffin cups or line with paper. In mixing bowl, stir together flour, cheese, sugar, baking powder, and salt and pepper. Make a well in the center.

In a small bowl, combine egg, milk, and oil. Add all at once into the well. Stir until moistened. Batter should be lumpy. Fold in bacon and fill tins to the top. Bake 20 to 25 minutes. If you don't like sweets, leave out the sugar.
