NO-BAKE "CHEESE" CAKE 
CRUMB MIXTURE:

6 tbsp. melted butter (coconut butter is nice, if available)
1 1/2 c. graham cracker crumbs
4 tbsp. date (or raw sugar or table sugar)
1/2 tsp. coriander
1 tsp. orange rind

Press into bottom of 8 inch pie pan, saving a few crumbs for the top of the pie.

FILLING:

2 rounding tbsp. agar-agar flakes (or plain gelatin)
3/4 c. honey
1 c. milk (soy - if dairy intolerant)
2 tsp. lemon rind
1 tsp. vanilla
3 c. soft tofu (plain)
1 c. whipped cream
1/8 tsp. salt

Put agar (or gelatin) in milk. Let stand 5 minutes. Add honey and salt. Place over low heat, stirring constantly until agar (or gelatin) dissolves and mixture thickens slightly. Remove from heat and beat in remaining ingredients with an electric mixer. Fold in whipped cream. Turn into prepared pan and sprinkle reserved crumb mixture on top. Chill until firm.
