2 lb. lg. raw shrimp 1/2 c. butter 1 tsp. salt 6 cloves garlic, crushed 1/4 c. chopped parsley 2 tsp. grated lemon peel 2 tbsp. lemon juice 6 lemon wedges Remove shells and devein shrimp. Wash. Melt butter in 13 x 9 x 2 inch baking dish in oven. Add salt, garlic and 1 teaspoon parsley; mix well. Arrange shrimp in single layer baking dish. Bake, uncovered, for 5 minutes at 400 degrees. Turn shrimp. Sprinkle with lemon peel, juice, and remaining parsley. Bake 8-10 minutes or just until tender. Arrange on serving dish with rice and pour garlic butter over all. Garnish with lemon wedges. |
