FUNNEL CAKES 
1 1/3 c. flour
1/4 tsp. salt
1/2 tsp. baking soda
3 tbsp. sugar
2 tsp. baking powder
2/3 c. milk
2 eggs
Powdered sugar

Beat eggs slightly; add milk. Sift dry ingredients together; add to milk, egg mixture. Beat until smooth. Heat 1 minute the oil in 7-inch skillet. Use 1/4 cup batter for each cake.

Pour batter into funnel, holding finger on bottom of funnel. Drop in spiral motion over hot oil. Brown, then use tongs to turn and brown on other side. Drain on paper towel. Sprinkle with sifted powdered sugar while hot, then serve.
