FUNNEL CAKE 
2 lg. eggs
1 c. milk
1 3/4 c. flour
3 tbsp. sugar
1 tsp. vanilla
1 tsp. baking powder
1/4 tsp. salt
Confectioners sugar
Vegetable oil

Beat eggs, adding milk gradually. Add flour, sugar, baking powder, salt and vanilla. Beat until smooth. Heat 3/4 inch oil in a skillet until hot enough to fry. Pour batter into a funnel, holding finger over bottom opening. Pour batter into hot oil, starting at the center of the skillet and pour in a spiral until a 6 inch cake forms. Flip over with pancake turner or tongs and fry until crisp. Drain and sprinkle with confectioners sugar.
