POTATO BAKE 
1 (36 oz.) bag Southern style frozen hash browns, thawed
1 stick butter
2 c. Cheddar cheese, shredded
1 pt. sour cream
3/4 c. onion, diced (optional)
1 tsp. salt
Dash pepper

Melt butter and cheese. Add rest of ingredients. Add potatoes, mixing well. Place in 2 to 2 1/2-quart casserole, covered. Bake at 325 degrees for 1 to 1 1/2 hours. Check tenderness of potatoes. Serves 10 to 12.
