COCONUT PIE 
1/2 c. sugar
1/2 c. sifted flour
1/4 tsp. salt
3 c. milk
1 c. coconut
2 egg yolks, beaten
2 tsp. vanilla
1 tbsp. butter

Combine sugar, flour and salt in double boiler. Add milk and stir until smooth. Add coconut. Cook 15 minutes, stirring constantly. Mix small amount with beaten egg yolks, returning to double boiler. Add vanilla and butter, cooking 2 more minutes. Cool. Turn into cooled, baked pie shell.

MERINGUE:

2 egg whites
1/4 c. sugar
1/4 tsp. cream of tartar

Beat egg whites, sugar and cream of tartar until stiff. Pour on filling and sprinkle with coconut. Bake at 350 degrees for 15 minutes.
