COCONUT PIE 
4 egg yolks
1 2/3 c. evaporated milk
1 1/2 c. sugar
1/4 c. plain flour, mixed with sugar
1 tsp. vanilla
1/4 c. butter
8 oz. coconut

Beat egg yolks and milk and add flour and sugar mixture and butter. Cook until thick over boiling water, stirring constantly. Remove from heat, add coconut and vanilla. Pour into cool baked pie crust. Top with meringue and brown.

MERINGUE:

4 egg whites
1/4 tsp. cream of tartar
8 tbsp. sugar
1/2 tsp. vanilla

Beat egg whites. Beat in sugar, 1 tablespoon at a time. Continue beating until stiff peaks form and are glossy. Beat in vanilla.
