BLACK BEANS AND RICE 
1 lb. pkg. dried black beans
9 c. water
1 tbsp. salt
1 pkg. smoked turkey sausage or kielbasa
2 tbsp. olive oil
1 lg. onion, chopped
2 cloves garlic, minced
2 lg. green peppers, halved, seeded, and sliced
1 tsp. ground coriander
1/2 tsp. cumin, grounded
1/2 tsp. pepper
1 c. uncooked long grain rice

Pick over beans; rinse. Combine beans and water in large kettle. Bring to boil; cover. Boil 2 minutes. Remove from heat and let stand for 1 hour. Return to heat. Bring to boil; add salt. Lower heat and simmer 1 hour or until beans are firm but tender. Brown smoked sausage; cut in small slices in oil in large skillet. Add to beans and simmer 30 minutes. Saute onion and garlic in pan drippings, adding oil if needed. When soft, add green pepper. Cook, stirring constantly, for 5 minutes. Press some black beans against side of kettle with a wooden spoon to mash slightly. Stir in rice. Cook, stirring occasionally, 30 minutes or until rice is tender and mixture is dry. Serve on a platter.
