HEARTY CHICKEN BAKE 
3 c. hot mashed potatoes
1 c. Cheddar cheese, shredded
1 can French fried onions
1 1/2 c. cooked chicken, cubed
1 (10 oz.) pkg. frozen mixed vegetables, thawed & drained
1 can cream of chicken or mushroom soup
1/4 c. milk
1/2 tsp. ground mustard
1/4 tsp. garlic powder
1/4 tsp. black pepper

Preheat oven to 375 degrees. In medium bowl, combine potatoes, 1/2 cup cheese and 1/2 can fried onions; mix thoroughly. Spoon potato mixture into greased 1 1/2 quart casserole. Using back of spoon, spread potatoes across bottom and up sides of dish to form a shell.

In a large bowl, combine chicken, vegetables, soup, milk and seasonings; pour into shell. Bake, uncovered, at 375 degrees for 30 minutes or until heated through. Top with remaining cheese and onions, return to oven 5 minutes or until cheese melts. Let stand 5 minutes before serving.
