COUNTRY BRUNCH 
12 eggs, well beaten
9 slices white bread, crusts removed
4 tbsp. butter, cut into sm. cubes
3 c. milk
6 scallions, chopped, including tops
1/4 c. chopped green pepper
2 lbs. pork sausage, brown, drained & crumbled
2 c. cheddar cheese, grated
1 tsp. salt
1/4 tsp. black pepper

Combine all ingredients in a large bowl and blend well. Pour the egg mixture into a buttered 9"x13" casserole dish and refrigerate, covered for 8 hours or overnight. Bake the eggs in a preheated 300 degree oven for 1 hour, uncovered.
