COUNTRY CHICKEN | |
4 med. potatoes (about 1 1/2 lb.), cut into bite-sized chunks 1 lb. hot Italian sausage links, cut into 1 1/2 inch pieces 1 tbsp. salad oil 1 (2 1/2 to 3 lb. broiler-fryer, cut up 4 med. green or red peppers, cut into bite size pieces 1 lg. onion, quartered and separated into pieces 1/2 c. water 1/2 tsp. salt 1/2 tsp. oregano In large roasting pan, mix potatoes, sausages, and salad oil. Bake in 425 degree oven for 15 minutes. Cut each piece of chicken breast in half; add with next 5 ingredients to pan, tossing to mix with ingredients in pan. Bake for 30 to 35 minutes longer until chicken is done. Makes 6 servings. |
