COUNTRY SUPPER 
1 lb. smoked sausage or Kielbasa
3 tbsp. bacon drippings or vegetable oil
4 lg. potatoes, thinly sliced
3 carrots, sliced
1/2 c. sliced celery
1 med. onion, chopped
Salt and pepper to taste

Fry sliced potatoes, carrots, celery and onions in oil over low heat in a heavy skillet. Season with salt and pepper. When carrots and potatoes are tender. Place sausage on top. Cover and heat for 12 minutes. Feeds 4.
