SPANISH RICE 
1/3 c. oil
1 c. white rice
2 c. water
1/2 c. tomato sauce
2 tbsp. chopped onion
1 garlic clove, diced
Powdered cumin to taste
Salt to taste

Brown rice lightly in oil. Add onion and garlic to rice. Add tomato sauce, mix. Add water, stir and mix. Add cumin and salt. Bring to a boil; immediately lower heat. Cover and cook 30 minutes. (Don't peek until done).
