MS. SKLAR'S RECIPE FOR BLACK
BEANS & RICE
 
1 bag black beans
1 lg. onion
4 cloves garlic
2 green peppers
Olive oil
Spanish olive
1 tsp. salt
1 tsp. pepper
1/4 tsp. oregano
1 bay leaf
1/2 tsp. sugar
3 tbsp. vinegar (apple cider vinegar)
2 tbsp. dry white cooking wine

1. Soak beans overnight in 3 times the amount of water (in refrigerator; covered). Or just buy the can, but then you'll have to reduce cooking time a lot.

2. Drain beans after soaking, add a green pepper, cut in half. Add new water and bring to a boil. Reduce heat and cook/simmer for 1 hour and a half.

3. Start a saute with 1 chopped onion, 1 chopped green pepper, salt, pepper, garlic, oregano, bay leaf and sugar. (All in olive oil.)

4. When beans begin to soften up, take out 1 large ladle of beans, mash them up and add to saute. Leave a while so they take in flavor.

5. Add entire saute to beans.

6. Cook another hour (simmer) on medium heat.

7. Add vinegar, wine, 1 tablespoon olive oil, a couple olives and some liquid from the olives. Taste and spice to taste. Beans will be even tastier the next day.
