SPRITZ COOKIES WITH RASPBERRY
FILLING
 
1 c. butter
3/4 c. sugar
3 egg yolks
2 1/2 c. flour
1/8 tsp. salt
1 tsp. almond extract
1 tsp. baking powder
1 jar red raspberry jam
Confectioners' sugar

Cream butter; add sugar gradually; add egg yolks. Set aside. Sift flour, measure. Add salt, flour and baking powder to first mixture. Add flavoring. Bake in 400 degree oven for 7 to 10 minutes. When cool, put teaspoonful of red raspberry jam on 1 cookie, place another cookie on top (to make sandwich). Sift confectioners' sugar on top of cookies.
