PARMESAN POTATO CASSEROLE 
I serve with steaks or pork. Family favorite!

3 large julienne baking potatoes
1/2 cup (1 stick) butter
1 cup shredded Parmesan cheese
1/2 to 1 cup half and half
salt and pepper, to taste

Preheat oven to 350°F. Prepare 9x13-inch casserole dish sprayed with non-stick spray (Pam). Julienne potatoes - make sure to run under cold water and dry on kitchen towels.

In a large skillet (preferably non-stick), melt 1 stick butter on medium heat. Do not let butter brown. Add potatoes, making sure all moisture is gone. Stir and fold potatoes until they become translucent. DO NOT brown. This takes about 10 minutes.

Add cheese and stir in until well combined. You can turn the heat off at this point. Stir in half and half. Make sure mixture is not too thick. It will thicken during baking process. Salt and pepper to taste. Pour into prepared casserole dish.

Bake in 350°F oven for an hour or until done. Should be brown and bubbly on top.
