POTTED BEEF 
12-16 oz. London Broil (or other beef), cubed
2 stalks celery, chopped
3 carrots, chopped
1 c. mushrooms, chopped
1 sm. onion, diced
1 lg. can Italian style tomatoes
Oregano
Salt
1 sm. can tomato paste
Pepper
2 shots Tabasco sauce
Bay leaf

Brown meat; add cut tomatoes and enough juice to cover meat. Add vegetables. Season to taste. Simmer slow 2-3 hours until meat is tender. Stir in paste 5-10 minutes before serving.
