POTATO CASSEROLE 
This recipe can be made ahead and frozen before baking. However, allow for longer oven cooking time.

REGULAR RECIPE:

Half & half
9 to 10 potatoes
1 lg. sour cream
5 to 6 green onions
2 c. Cheddar cheese

LOW FAT CONSCIOUS RECIPE:

1% or skim milk
9 to 10 potatoes
1 lg. Imo
5 or 6 green onions
2 c. low fat Cheddar cheese

Cook potatoes as for potato salad and grate. Add onions to grated potatoes. Combine sour cream with half and half until consistency of white sauce; mix in potatoes; add two cups cubed cheese. Bake 45 minutes at 300 degrees uncovered.
