FROZEN PINEAPPLE CREAM DESSERT 
1 (20 oz.) can pineapple, juice pack, including all but 1/4 cup juice
2 tsp. fresh lemon juice
3/4 c. evaporated milk
4 dashes ground ginger

Combine all ingredients in blender and blend on high for 1 minute. Freeze for 2 hours in freezer proof bowl. Beat with electric mixer until light and return to freezer. Freeze for 1 1/2 hours. Stir and serve. Makes 6 servings. Each serving equals approximately 50 calories.
