STUFFED ORANGE RUFFY - OR
FLOUNDER
 
6 sliced fillets or ruffy or flounder, cut in half

Combine: 1 egg, slightly beaten 2 tbsp. milk 1 tbsp. mayonnaise 1 tsp. dry mustard 2 dashes liquid hot sauce

Wash and dry fish; sprinkle with lemon juice. Place fish in single layer, skin side down. Spoon generous amounts of crab mixture on bottom half and top with other half. Bake at 400 degrees for 25 minutes. Pour on sauce and sprinkle with paprika. Bake 15 minutes more.

Sauce: Mix together 1 cup mayonnaise, 1 egg, Old Bay seafood seasoning, and 2 dashes of hot pepper sauce. Mix well.
