OAT BRAN MUFFINS | |
1 1/2 c. oat bran 1 c. unbleached or whole wheat pastry flour 1/2 c. sugar 1 tbsp. baking powder 1/2 tsp. cinnamon 1/8 tsp. nutmeg 3/4 c. milk 1/3 c. vegetable oil 2 lg. egg whites 1/2 c. raisins TOPPING: 1/3 c. oats 2 tbsp. chopped walnuts 2 tbsp. brown sugar 2 tsp. melted butter Preheat oven to 350 degrees. Stir together oat bran, flour, sugar, baking powder, cinnamon and nutmeg. Stir in milk and oil until just moistened. Beat egg whites until stiff and fold them into batter. Fold in raisins. Spoon into muffin tins. Mix topping with oats, nuts, brown sugar and melted butter and sprinkle on top of muffin batter. Makes 4 giant muffins or 9 regular muffins. Bake 25-30 minutes for large; 18-20 minutes for regular size muffins. |
