W.'S OAT BRAN MUFFINS 
2 1/4 c. oat bran (fine)
1/4 c. raisins
1/4 c. minced apples
1 tsp. cinnamon
2 tsp. baking powder
1/2 tsp. salt (optional)
3/4 c. skim milk
1/3 c. honey (or 1 c. granulated fructose)
4 egg whites
2 tsp. vegetable oil or apple sauce

Heat oven to 425 degrees. Coat 12 medium muffin cups with vegetable oil or line with paper baking cups. In large bowl, combine oat bran, raisins, apples, cinnamon, baking powder, and salt (optional). Add remaining ingredients; mix just until dry ingredients are moistened. Fill prepared muffin cups almost full. Bake for 16 minutes or until golden brown.
