G.'S BRAN MUFFINS 
1/4 c. butter
6 tbsp. brown sugar
6 tbsp. granulated sugar
2 tbsp. honey
1 tbsp. water

BATTER:

1/2 c. whole wheat flour
1/2 c. plus 1 tbsp. cake flour
1/2 tsp. salt
1/2 tsp. baking soda
3 c. bran
1 1/2 c. buttermilk
1/2 c. plus 2 tbsp. sugar
1/2 c. raisins
2 eggs
1/4 c. honey
1/4 c. oil
1/4 c. crushed pineapple
1 tsp. cinnamon (drained)

Cream butter, gradually add sugar. Blend in honey and water mixture and whip until fluffy. Coat tins liberally and evenly with mixture, using 2 tablespoons per tin. Prepare batter. Combine flours, sugar, salt, cinnamon and soda. Stir in raisins, add eggs, honey, oil and pineapple and blend. Stir in bran and buttermilk and mix until it's smooth. Fill coated muffin tins 3/4 cup full. Bake in 400 degree oven for 18-20 minutes. Remove immediately.
