BRAN MUFFINS | |
1/2 c. raisins 1/2 c. pecans, coarsely chopped 1 c. + 2 tbsp. cake flour 1 egg 1/4 c. vegetable oil 6 tbsp. brown sugar 1 c. buttermilk 5 tbsp. honey 1 1/2 c. bran flakes cereal 1 1/4 tsp. baking soda 1/2 tsp. salt Toss raisins and pecans with the 2 tablespoons flour; set aside. Beat egg in large bowl until light. Slowly beat in vegetable oil. Add brown sugar, buttermilk and honey, mixing after each addition. Stir in bran flakes. Sift remaining flour with baking soda and salt. Stir and blend into first mixture. Stir in raisins and pecans (with their flour). Spoon into 12 greased and floured muffin cups. Bake at 400 degrees for 16 to 18 minutes. |
