OAT BRAN AND RAISIN MUFFINS | |
2 c. 100% oat bran, uncooked 2 tsp. baking powder 1 tsp. ground cinnamon 1/2 tsp. ground nutmeg 1 c. skim milk 1/3 c. honey 1/4 c. salad oil 2 egg whites 1 c. dark seedless raisins Preheat oven to 425 degrees. Place paper liners in 12 muffin-pan cups (2 1/2 x 1 1/4 inch). In a large bowl, mix the first four ingredients. In a small bowl, beat the milk, honey, oil, and egg whites until blended. Stir into the oat bran mixture just until the oat bran is moistened. Fold in the raisins. Spoon batter into cups to come almost to the top of each cup. Bake 20 minutes or until a toothpick inserted in center of the muffin comes out clean. Immediately remove muffins from pan and serve warm. Or cool on a wire rack. Makes 12 muffins. About 155 calories, 1 g. saturated fat, negligible cholesterol per muffin. |
