CARAMEL SWEET POTATOES 
6 lg. sweet potatoes
1 tsp. salt
1 c. brown sugar
2 tbsp. flour
2 tbsp. butter
1 c. thin cream
6 lg. marshmallows, cut into quarters
Chopped nuts, if desired

Boil sweet potatoes in the jackets until tender. Drain and cool. Peel and cut crosswise in 1 1/2 inch slices; place in an oblong 2 to 2 1/2 quart baking dish. Sprinkle mixture of salt, sugar, and flour over potatoes. Dot with butter, then pour cream over potatoes. Bake, uncovered, at 350 degrees for 60 minutes. Add marshmallows and nuts last 15 minutes of baking time. Yield: 6 to 8 servings.
