BANANA NUT BREAD 
1/2 c. vegetable oil
1 1/4 c. sugar
2 eggs
1 1/2 c. flour
1/4 tsp. salt
1 tsp. baking soda
5 tbsp. buttermilk or 4 tbsp. milk and 1 tbsp. vinegar
1 tsp. vanilla
1 c. mashed bananas
1/2 to 3/4 c. chopped pecans

Mix together oil and sugar, then add eggs, flour, salt, soda, milk, vanilla, bananas and pecans. Pour into floured and greased loaf pan.

Bake at 375°F for 1 hour.
