YAM BREAD | |
3/4 c. cooked, mashed yams 1/4 c. orange juice 1/4 c. milk 2 tbsp. honey 1/2 c. butter 1/2 c. packed brown sugar 1/2 c. granulated sugar 2 eggs 1 1/4 c. flour 1/2 tsp. baking soda 1/2 c. chopped dates 1/2 c. pecans Mix yams, orange juice, milk, and honey. In another bowl, cream butter, sugars, and eggs. Stir in flour, soda, dates, and pecans. Add to yam mixture; mix well. Pour mixture into buttered 9x5x3 inch loaf pan. Bake at 350 degrees for 40 minutes; cover with foil. Bake 10 minutes or until wooden pick inserted in center comes out clean. |
