ZUCCHINI CASSEROLE 
4 med. (4 c.) zucchini, diced
1 med. onion, chopped
2 c. Cheddar cheese, grated
1 c. Bisquick
1 tsp. salt
1/2 tsp. pepper
1 tsp. oregano leaves
3 lg. eggs
1/2 c. oil

Mix all ingredients except eggs and oil. Beat eggs and add oil; add to mixture. Oil (or Pam spray) baking dish. Spread in zucchini mixture. Top with extra 1/2 cup Cheddar cheese (and some Parmesan cheese if you wish). Bake at 350 degrees for 40 minutes.
