CAULIFLOWER-CHEESE CASSEROLE | |
1 cauliflower (1 1/2 lbs.) 1 sm. red pepper (chop) 1 sm. green pepper (chop) 1 clove garlic (minced) 2 tbsp. cornstarch 1/2 c. milk 3 tbsp. butter 1 tsp. salt 1/4 tsp. pepper 1 c. shredded Jack cheese 2 tbsp. dry bread crumbs 1 tbsp. butter (melted) Separate cauliflower. Drop into boiling water. Cook 5 minutes or until tender; drain. Arrange in a shallow 2 quart baking dish. Heat 1 tablespoon of butter in frying pan. Add peppers and garlic. Saute 1 1/2 minutes. Sprinkle over cauliflower. Mix cornstarch into milk. Add 2 tablespoons butter in pan. Stir in milk and cornstarch mix. Cook. Stir until thick. Add salt, pepper and cheese. Stir. Pour over vegetables. Mix bread crumbs and butter. Sprinkle on top of casserole. Bake at 350 degrees for 35 minutes. 4 servings. |
