MULTI - BEAN - PEA SOUP 
1 lb. peas and calico beans
3 qts. water
3 ham hocks and spices (6 whole cloves, pepper corn and any other spices like bay leaf)
1 (28 oz.) can tomatoes, undrained
2 onions, chopped
4 stalks celery, chopped
3 cloves garlic, minced (if desired)
Salt and pepper to taste
1 lb. sliced link sausage
4 Polish sausage, sliced
3 boneless chicken breasts, cubed
1/2 c. red wine (optional)
1/2 c. chopped parsley (optional)

Wash and drain peas and beans. Add water, ham hocks and spices. Simmer covered 2 hours. Add tomatoes, onions, celery, garlic, and salt and pepper to taste. Simmer covered 1 1/2 hours. Add link sausage, Polish sausage and chicken breast cubes; simmer 30-40 minutes. Make a day before for best flavor.

OPTIONAL: Before serving, add wine and parsley. (I used more tomatoes. Remove bones from hocks and chicken. Cut hocks and chicken up.)
