NAVY PEA BEAN SOUP | |
Sm. pkg. dried beans 1 meaty ham bone 2 lg. onions 1 potato Salt & pepper to taste Clean and soak beans overnight. Boil ham bone in large pot in about 10 cups of water. When the meat starts falling off the bone, pour in beans and cut back on the fire. Dice the potato and put in the soup pot (this will help thicken the stock and add a hint of flavor). About 45 minutes before it is done, add the onions and seasonings. Serve with hot cornbread and cold buttermilk, O.K., you can have ice tea. |
