ZESTY MEATLOAF 
2 lbs. ground turkey
1 c. chopped dill pickles
2 eggs, beaten
1/4 c. chopped onion
1/4 c. fine dry bread crumbs
1/8 tsp. salt and pepper
1 1/2 c. shredded Monterey Jack cheese

In large bowl, mix turkey, chopped pickle, egg, onion, bread crumbs, pepper and salt. Divide meat mixture in half. In 9x5 inch loaf pan, pat half of mixture, sprinkle with 1 cup cheese. Cover evenly with remaining meat mixture. Bake at 350 degrees for 1 hour. Remove and sprinkle with remaining cheese. Bake 5 minutes more until cheese melts.
