GRANNY DEEM'S VEAL SANDWICHES 
Call your butcher the day before you plan on making sandwiches. Ask him to put pork shoulder (deboned) in the cooler overnight and then to slice it the next morning 1/8" thick, no thinner. Any thicker and you will have to pound with meat hammer. You need 1/2 pound per 4 people to be served.

At home, pound the veal with a meat hammer if it is not thin enough. Using a mixture of milk and eggs, dip the veal in this and then roll in cracker meal. Deep fat fry the coated meat until golden brown. Veal is fried best in a large cast iron Dutch oven. Serve on hamburger buns with slaw.

VEAL SLAW: Grate for slaw 1 large head cabbage. Add Miracle Whip salad dressing, mustard, salt and pepper to taste. If the slaw is not yellow, you do not have enough mustard.
