SPLIT PEA SOUP | |
1 (1 lb.) bag uncooked split peas 2 1/2 qt. water (10 c.) 2 tsp. salt 2 c. chopped onion 2 c. chopped celery 1/2 stick butter (4 tbsp.) Put peas, water and salt in large kettle. Bring to a strong boil, then turn heat down. Simmer for 1/2 hour before adding other ingredients. That way you can skim the froth off (to reduce gas bubbles in the finished product). After skimming away froth, add onions, celery and butter and continue simmering at least 1 hour more. Freezes well. |
