JAPANESE PORK ROAST
Boneless pork loin roast
1 clove garlic
1 sm. chunk ginger, peeled and sliced
1/2 c. Sake
1/3 c. soy sauce
2 tbsp. sugar
1 tsp. salt
Dash of pepper
1 green onion

In large saucepan, place pork, garlic, ginger and put enough water to almost cover the pork. Bring to a boil. Remove with a strainer the brown foamy waste. Cover with a lid halfway and reduce heat to medium. Cook for about 2 hours turning the pork occasionally, until there is no liquid left. Then brown the meat (in the same pan) until coffee like color. Place 1/2 cup of warm water and the Sake and continue to cook. When comes to a boil, add the remaining seasonings and cook 5 minutes. Let cool in the sauce. Slice pork and serve with juice, sprinkle chopped green onion on top. Wonderful served with fried rice.
