MOLDED CORNED BEEF SALAD 
1 lg. pkg. lemon Jello
1/2 c. cold water
1 can corned beef
1 c. Miracle Whip
1 green pepper, finely cut
1-1/2 c. V - 8 juice
2 hard boiled eggs, chopped
1-1/2 c. celery, finely cut
1/2 sm. onion, finely cut

Dissolve Jello in boiling hot V - 8 juice. Add cold water. Break the corned beef into small pieces and add to the Jello with the rest of the ingredients. Mix well and pour into an 8 x 13 inch loaf pan which has been sprayed with Pam. Refrigerate until firm. Best to make the day before serving. Serve on lettuce leaves. Makes 10 to 12 servings.
