DO AHEAD MASHED POTATOES 
5 lb. potatoes
2 tbsp. butter
1 tsp. salt
1/4 tsp. pepper
1 c. sour cream
8 oz. cream cheese
1 tsp. onion salt

Peel, boil and mash potatoes with remaining ingredients. Place mixture in greased casserole. Dot with butter and cover. May be refrigerated up to two days. To serve: Bake at 350 degrees for 15 minutes, or longer if necessary. Remove cover and bake additional 15 minutes. Serves 12.
