POTATO PANCAKES 
1 c. raw potatoes, finely grated
2 tbsp. flour
1 tsp. salt (optional)
1/2 tsp. pepper
2 eggs, well beaten
2 tsp. onions, finely grated

Combine all the ingredients and beat 1 or 2 minutes with a wooden spoon. Heat vegetable oil in a skillet and drop the potato batter into the sizzling oil from the wooden spoon. When patties start to brown, turn them over with a spatula. When lightly brown on both sides, they are done.
