TAMALE PIE 
1 lg. onion, chopped
1 lg. green pepper
1 c. yellow cornmeal
1 c. creamed or whole kernel corn
2 c. canned or fresh tomatoes
1 c. sesame milk, nut milk, or tomato juice
1 tsp. salt
1/4 tsp. cumin
1/4 tsp. garlic powder
1 can whole pitted olives

Saute onion and pepper in a little water. Add next 4 ingredients and cook until thick, stirring constantly. Add other ingredients. Pour into casserole and bake for 1 hour at 350 degrees F. Will be more firm if made day ahead and refrigerated. Heat before serving.

Yields 10 1/2 cup servings at 124 calories each. 11% protein, 31% fat, 58% carbohydrates.
