CHICKEN MARENGO 
1/4 c. oil
1 cut up chicken
Paprika
Garlic powder
1 c. chopped mushrooms
1 chopped onion
1/4 tsp. oregano
1/4 tsp. bay leaf
1/4 tsp. thyme
2 (8 oz.) tomatoes
2 tsp. sugar

Fry chicken in oil, season with paprika and garlic powder (to taste). Remove chicken to Dutch oven, pour excess oil off and fry mushrooms and onions. Pour fried onions and mushrooms into Dutch oven. Add 1 cup water to frying pan and stir and cook over medium high heat for 2-3 minutes, pour juice into Dutch oven, add canned tomatoes and remaining spices - season to taste. If you like add chopped zucchini to mushroom and onion mix. Serve over spaghetti.
