MARINATED GREEN BEANS 
1 1/2 lbs. fresh green string beans
1/4 c. wine vinegar
1 tbsp. Dijon mustard
1/2 tsp. salt
Pepper to taste
1 c. olive oil
1/4 c. minced shallots
1 tsp. lemon juice

Blend all ingredients except beans in blender or food processor. Blanch beans until just tender, make sure they still crunch. Pour marinade over warm beans and serve. NOTE: Can be prepared ahead on same day and served at room temperature.
