MARINATED PEPPERS WITH BEAN
SPROUTS
 
Peppers (green, red, yellow or anaheim)
1 pkg. azuki, mung & lentil sprouts
Garlic
Olive oil
Cayenne pepper
Brown paper bag

Wash peppers and place on broiler pan. Broil peppers until visibly opaque or burnt on all sides/surfaces. In the meantime peel garlic and coarsely chop. Remove peppers and place in brown paper bag for approximately 10-15 minutes. Then peel peppers under running cold water and core.

Place peppers and sprouts in a plastic container, cover with olive oil and add both chopped garlic and cayenne pepper to taste. Allow to marinate at least overnight. Serve as hors d'oeuvre.
