SPICED PEACH-NUT CONSERVE | |
4 c. finely chopped peaches Spice 1/4 c. lemon juice, fresh, frozen, or canned 1 c. thinly sliced Brazil nuts 7 1/2 c. sugar 1 bottle fruit pectin Peel and pit about 3 pounds soft ripe peaches. Chop very fine or grind. Measure 4 cups into very large saucepan. Add 1/2 to 1 teaspoon each cinnamon, cloves, and allspice, or any desired combination of spices. Add 1/4 cup lemon juice. Add nuts; add sugar. Place over high heat, bring to a full boil, boil hard for 1 minute, stirring constantly, and at once stir in bottled fruit pectin. Then stir and skim by turns for 5 minutes to cool slightly and to prevent floating fruit. Ladle quickly into glasses. Paraffin at once. makes 11 (6 ounce) glasses. |
