CANTALOUPE-PEACH CONSERVE | |
4 c. peaches 4 c. cantaloupe 4 lemons 3 c. honey 1 c. walnuts Peel and dice cantaloupe and peaches. Juice the lemons and grate their rinds. Put cantaloupe, peaches and lemon juice and rind in a kettle. Bring to a boil. Add the honey and cook until thick and clear. Add nuts during last 5 minutes of cooking. Spoon into hot sterilized jars to within 1/2 inch from top. Complete seals and process in a boiling-water bath for 5 minutes. Yield: 6 half-pints. |
