ZINGY ZUCCHINI BARS | |
1 3/4 c. flour 1 1/2 tsp. baking powder 1 tsp. salt 3/4 c. butter 1/2 c. sugar 1/2 c. packed brown sugar 2 eggs 1/2 tsp. vanilla 2 c. shredded zucchini 3/4 c. coconut 3/4 c. snipped, pitted dates 3/4 c. raisins FROSTING: 2 (3 oz.) pkg. cream cheese 1/2 c. butter 2 tsp. vanilla 3/4 tsp. cinnamon 4 c. powdered sugar Grease 15x10x1 inch baking dish. In a bowl, stir together flour, baking powder and salt. In a large mixer bowl, beat butter, sugar and brown sugar with electric mixer until well combined. Beat in eggs and vanilla. Add flour mixture; beat on low speed until combined (batter will be thick). By hand, stir in zucchini, coconut, dates, and raisins. Spread in pan. Bake at 350 degrees for 30 to 40 minutes or until wooden toothpick comes out clean. Cool, frost with cinnamon, cream cheese frosting. FROSTING: Beat together cream cheese, butter, vanilla, and cinnamon until light and fluffy. Gradually add powdered sugar, beating until smooth. If necessary, add a little more sugar or milk. |
