SPICY ZUCCHINI BARS | |
1/2 c. firmly packed brown sugar 1/2 c. sugar 3/4 c. butter, softened 1 3/4 c. flour 1 1/2 tsp. baking powder 1 tsp. cinnamon 1/2 tsp. nutmeg 2 eggs 1 tsp. vanilla 2 c. shredded zucchini, patted dry with paper towel 1 c. chopped nuts 1/2 c. coconut FROSTING: 3 c. powdered sugar 1 tsp. vanilla 1 tsp. cinnamon 3 tbsp. milk 3 tbsp. butter, softened Grease 15 x 10 inch jelly roll pan. In large bowl, cream sugars and butter. Lightly spoon flour into measuring cup, level off. Blend flour, baking powder, cinnamon, nutmeg, eggs, and vanilla into creamed mixture. Stir in zucchini, walnuts and coconut. Spread dough evenly in prepared pan. Bake at 350 degrees for 30 to 35 minutes until light golden brown. Cool. In large bowl, blend frosting ingredients until smooth and creamy. Spread over bars. Makes 48 bars. |
